Created in 2018 by the Communauté de Communes Pyrénées Audoises, the Flavors Festival was born from the desire to promote and enhance the gastronomic richness of the Haute Vallée de l'Aude. Every September, the town of Quillan, nestled at the foot of the Aude Pyrenees, hosts this event that celebrates local producers, artisans, and restaurateurs. The festival is sponsored each year by a renowned chef, an ambassador for local flavors.

At the heart of the festival, a large producers' market allows visitors to meet farmers, breeders, cheesemakers, beekeepers, and winemakers from the region. Discover the specialties of the Pyrénées Audoises: sheep and goat cheeses, mountain honeys, artisanal charcuterie, Limoux wines and Blanquette, craft beers, jams, pastries, and many other local treasures.
