The celebration of gastronomy and terroir of the Pyrénées Audoises
The Pyrénées Audoises Flavors Festival is a gastronomic event organized every September in Quillan by the Communauté de Communes Pyrénées Audoises. Since 2018, this festival has showcased the culinary richness of the Haute Vallée de l'Aude and the Pyrenees, bringing together local producers, chefs, and food lovers for demonstrations, tastings, and gourmet activities.
Created in 2018 by the Communauté de Communes Pyrénées Audoises, the Flavors Festival was born from the desire to promote and enhance the gastronomic richness of the Haute Vallée de l'Aude. Every September, the town of Quillan, nestled at the foot of the Aude Pyrenees, hosts this event that celebrates local producers, artisans, and restaurateurs. The festival is sponsored each year by a renowned chef, an ambassador for local flavors.
At the heart of the festival, a large producers' market allows visitors to meet farmers, breeders, cheesemakers, beekeepers, and winemakers from the region. Discover the specialties of the Pyrénées Audoises: sheep and goat cheeses, mountain honeys, artisanal charcuterie, Limoux wines and Blanquette, craft beers, jams, pastries, and many other local treasures. Each producer shares their expertise and the story behind their products.
The festival offers a rich program of culinary demonstrations led by the guest chef and other chefs from the region. These live workshops allow you to discover recipes that highlight local products and learn preparation techniques. Participatory workshops for adults and children complement the offerings, inviting everyone to get hands-on and leave with new gourmet ideas.
Beyond gastronomy, the Flavors Festival is a moment of celebration and conviviality. Musical entertainment, street performances, and family activities punctuate the two days of the festival. The town of Quillan, with its mountainous setting and medieval heritage, provides an exceptional natural backdrop for this celebration of Pyrenean flavors. The festival contributes to the economic and tourist influence of the region.
