Flogny-la-Chapelle, birthplace of the Burgundian gougère

The gougère is much more than a simple savory pastry: it is the gourmet soul of Burgundy. This small chou pastry made from choux pastry enriched with cheese — Comté, Gruyère, or Emmental depending on the recipe — was born, according to local tradition, in Flogny-la-Chapelle in the early 19th century. A baker from the town named Liénard is credited with it: inspired by the "ramequins" popular in Paris at the end of the 18th century, he adapted the choux pastry by incorporating cheese, thus creating the foundational recipe. As his customers found the small choux too small, he shaped them into a crown — thus giving birth to the gougère as we know it today.

While a historian, Alain Noël, has indeed suggested that a document from 1571 already mentioned the name "gougère" in Sens, it was in Flogny-la-Chapelle that the cheese version was codified and popularized. This small village in the Yonne, with its 1,000 inhabitants, proudly claims the title of "world capital of gougère" and celebrates it every year with a popular festival that is now thirty years old.

Thirty years of celebration and tradition

The Fête de la Gougère was created in 1996 by the Comité des Fêtes de Flogny-la-Chapelle. In thirty editions, it has established itself as one of the most anticipated gastronomic events in the Yonne and all of Burgundy. Every third Sunday in May, the Grande Rue and the parking lot of the community hall transform into a vast open-air gourmet market, attracting several thousand visitors from the region and beyond.

The festival brings together over 40 carefully selected exhibitors for the quality of their products: artisanal brewers, Burgundian winemakers, charcuterie makers offering hot blood sausages, cheesemongers, delicatessens, confectioners, crème de cassis producers, and many other local specialties. Local artisans, artists, and creators complement this lively market, alongside food trucks offering on-site catering.

The gougère competition: the heart of the festival

The unmissable highlight remains the gougère competition, open to all — amateurs and professionals alike — and judged by a jury of renowned chefs. Participants compete with ingenuity to present the most flavorful and best-made gougère. For the past few editions, a second competition, the "21st-century gougère," encourages revisited creations and contemporary interpretations of this ancestral recipe. The results are announced in the late afternoon, in an atmosphere of collective celebration.

For the youngest and most gourmands, a fastest gougère eater competition triggers laughter and applause. A drawing competition for children aged 3 to 11 allows young artists to express themselves on the gougère theme. Gougère preparation workshops with members of the festival committee allow the curious to learn the recipe live, with their hands in the dough.

The Guilde des Goûteurs de Gougères

Founded in 2018 by Philippe Clémandot, the Guilde des Goûteurs de Gougères is a gastronomic guild dedicated to the promotion and defense of this Burgundian specialty. Each year, during the Spring Chapter organized during the Fête de la Gougère, new members are solemnly inducted as "tasting knights." The ceremony, conducted in the tradition of the great Burgundian guilds, combines solemnity and conviviality: speeches, a parade in official attire, and, of course, tasting. The Guild actively contributes to the national recognition of the Flogny-la-Chapelle gougère.

Family entertainment and festive atmosphere

Beyond the gastronomic stands and competitions, the Fête de la Gougère is above all a great popular festival. The funfair with its rides, bumper cars, shooting games, and inflatable structures delights children. Face painting for children, musical parades with bands and brass bands — notably the Fanfare du Silex — and magic shows animate the aisles throughout the day. The Mandubian village, with its historical reenactment workshops (weaving, dyeing, rope making), invites young and old to travel back in time to the region's Gallic origins.

On-site refreshments and food allow for extended conviviality among neighbors, families, and tourists. It is the annual meeting place for the entire Tonnerre canton, a day when Flogny-la-Chapelle vibrates to the rhythm of its traditions and gastronomic pride. Entry is completely free.

The 31st edition of the Fête de la Gougère will be held on Sunday, May 17, 2026, in Flogny-la-Chapelle, in accordance with the tradition of the third Sunday in May. Organized by the Comité des Fêtes de Flogny-la-Chapelle, this popular and gourmet festival brings together several thousand visitors each year to celebrate the most Burgundian of savory pastries in the village that claims its origin.

On the program for this 31st edition: the grand gourmet market with its approximately 40 carefully selected exhibitors — winemakers from Burgundy and Chablis, artisanal brewers, charcuterie makers, cheesemongers, delicatessens, confectioners, crème de cassis producers — joined by craftspeople, local creators, and food trucks for a full day of flavors and conviviality.

The gougère competition, open to all regardless of professional status, remains the central attraction of the festival. Passionate amateurs and pastry professionals compete before a jury of renowned chefs to win the title of best gougère. The ancillary competitions — fastest eater, children's drawing, revisited gougère — add to the festive atmosphere. The spring Chapter of the Guilde des Goûteurs de Gougères will feature the annual inductions of new tasting knights midday.

Location

The Fête de la Gougère is held on Grande Rue and in the parking lot of the Salle Polyvalente in Flogny-la-Chapelle (89360). For the 2025 edition, the festival committee decided to return to the original historic location, in this same parking lot and on the Grande Rue.

Access

  • By car: Flogny-la-Chapelle is located about 20 km north of Tonnerre and 35 km southeast of Auxerre, on the RD905. From Auxerre: D965 towards Tonnerre then D905. From the A6, take the Nitry/Avallon exit then head towards Tonnerre. Flogny-la-Chapelle is also accessible from Chablis (15 km northwest).
  • Parking: Free parking on site. Plan to arrive early as crowds are significant midday.
  • By train: Tonnerre station (SNCF, Paris-Dijon line), then shuttle or taxi to Flogny-la-Chapelle (20 km).

Hours

From 9:00 AM to 6:00 PM approximately on the third Sunday in May. Competitions are open all day, with results announced in the late afternoon. The induction ceremony of the Guilde des Goûteurs de Gougères takes place midday (around 12 PM).
