Easter Tradition in Bessières, Haute-Garonne
The Bessières Giant Omelette Festival is one of the most emblematic gastronomic traditions in Haute-Garonne. Every Easter Monday since 1973, the World Brotherhood of Knights of the Giant Omelette of Bessières cracks 15,000 eggs in a 4-meter diameter pan, on the Place de la République, in front of thousands of visitors from across the Toulouse region and beyond. The giant omelette is offered free of charge to all attendees.
The event spans the entire Easter weekend with a festive program: vintage car rally, open-air market, giant aligot, egg hunt for children, free concerts under a big top, parade of world brotherhoods from all corners of the globe. A living tradition that radiates far beyond the village and has spread to dozens of twin towns around the world.
The Giant Omelette Festival is the major event in Bessières, a small commune in Haute-Garonne located 25 km north of Toulouse. The tradition officially began in 1973, on the initiative of the Bessières Merchants and Artisans Association and its president Bernard Beille, who decided to transform a local custom into a true tourist event. More than fifty years later, the event has established itself as one of the region's gastronomic and popular highlights.
The heart of the event is the giant omelette prepared on Easter Monday on the Place de la République. About fifty volunteers — egg crackers, beaters, seasoners, and turners — work around a 4-meter diameter pan, cooked over a wood fire and stirred with immense wooden spatulas. Fifteen thousand eggs are cracked in less than an hour, then the omelette is shared free of charge with all the crowd present, without reservation.
Organizer of the festival, the World Brotherhood of Knights of the Giant Omelette of Bessières has become, over the years, the driving force behind an international network that brings together sister brotherhoods in several countries — from Quebec to New Caledonia, passing through Argentina. Every Easter Monday, several costumed delegations parade through Bessières before the omelette preparation.
Beyond Easter Monday, the festival extends throughout the weekend with a rich program: vintage car tourist rally on Saturday morning (Bessières Pâques Tour), themed evenings under a big top on Place de la République, Easter mass with bread blessing by the Brotherhood on Sunday, giant aligot-sausage, giant egg hunt for children, beach party, free concerts, and on-site catering. The fairground market also enlivens the village throughout the weekend.

Three days of festivities organized by the World Brotherhood of Knights of the Giant Omelette of Bessières, with a packed program combining gastronomy, family entertainment, vintage cars, and free concerts, and the highlight on Easter Monday with the public preparation of the giant omelette on Place de la République.
The 2026 edition took place in a particular context marked by the Pope's death shortly before the Easter weekend, which was mentioned during the Easter mass celebrated on Sunday morning with the blessing of bread by the Brotherhood.

By car from Toulouse, take the D630 towards Bessières (approx. 30 minutes). Parking available around the town center; the center is partially pedestrianized during the festivities. For Easter Monday, plan to arrive early — the square fills up from 10:30 AM for the brotherhoods' parade.
The giant omelette on Easter Monday is completely free and requires no reservation. Most activities (concerts, parade, market) are free to access. Meals under the big top (royal couscous, beach party, aligot-sausage) are by reservation at public rates. The egg hunt is €1 per child.
