Each summer, the Commanderie d'Alsace of the Ordre International des Anysetiers organizes a gastronomic event in Colmar that is as unique as it is delicious: the Fête de l'Aïoli. For one day, the capital of Alsatian wines takes on a southern flair to celebrate the Grand Aïoli, that emblematic Provençal dish that brings friends, families, and food lovers together around the same table in a spirit of conviviality and sharing.

The Grand Aïoli, a Symbol of Conviviality

The Grand Aïoli is more than just a dish: it is a feast to be shared communally, a symbol of generosity and human connection. In Colmar, it is prepared according to Provençal tradition: desalted cod, seasonal vegetables — carrots, green beans, potatoes, artichokes —, hard-boiled eggs, and the star of the meal, the creamy and fragrant aïoli sauce, made from crushed garlic and olive oil. This Mediterranean feast is accompanied by Alsatian wines, creating an unexpected and delicious marriage between two exceptional terroirs.

The Order of the Anysetiers, Guardian of Conviviality

The Ordre International des Anysetiers has its roots in the Middle Ages, when apothecaries used star anise to treat lords and kings. Revived in 1955, the Order set itself the mission of perpetuating the values of solidarity, friendship, and mutual aid. The Commanderie d'Alsace, one of the many commanderies spread across France and Europe, organizes charitable events throughout the year — dinner conferences, cultural outings, producer markets — of which the Fête de l'Aïoli is one of the most festive and popular.

True to the Anysetiers' motto — "To Help and Give Hope" —, the Fête de l'Aïoli is above all a charitable event. The proceeds from the festival are donated to philanthropic causes and medical research, two of the Order's six pillars of action.
