Every summer, the Fête du Crémant de Bailly celebrates Crémant de Bourgogne AOP in the extraordinary troglodyte cellars of Bailly-Lapierre, dug 50 meters underground in the limestone cliffs of Saint-Bris-le-Vineux. Tastings of sparkling vintages, guided tours of the underground galleries, musical entertainment, and meetings with the winemakers from the 430 cooperative families make this day the grand festival of Burgundy bubbles in the Auxerrois region.

The Fête du Crémant de Bailly: Burgundy bubbles celebrated in their legendary cellars

In the heart of the Auxerrois vineyard, the Caves Bailly-Lapierre in Saint-Bris-le-Vineux (89530) house one of the most spectacular winemaking sites in Burgundy. Dug more than 50 meters underground in the limestone cliffs, these troglodyte galleries offer ideal natural conditions for the production and aging of Crémant de Bourgogne AOP. Every summer, the Fête du Crémant de Bailly throws open the doors of this remarkable site for a day of celebration of Burgundy bubbles.

The birthplace of Crémant de Bourgogne

The village of Bailly is universally recognized as the birthplace of the AOC Crémant de Bourgogne. In 1972, the Bailly-Lapierre cooperative was founded by a group of winemakers determined to enhance their production in the form of quality sparkling wine. Since then, the cellar has brought together more than 430 winemaker families who supply their grapes — mainly Chardonnay, Pinot Noir, Aligoté, and Pinot Gris — for the production of Crémants de Bourgogne using the traditional method.

Bailly-Lapierre vintages, whether brut blanc, brut rosé, extra-brut, or demi-sec, are now essential references for Burgundy effervescence, distributed throughout France and for export.

Saint-Bris-le-Vineux and the Auxerrois vineyard

Its Saint-Bris appellation produces the only white wine from Burgundy made from Sauvignon Blanc, a grape variety not widely grown in the region. The hillsides surrounding the village offer splendid panoramas of the vineyards and surrounding valleys, making this commune an exceptional wine destination just a few kilometers from Auxerre.
