Every last Sunday of October, the medieval village of Noyers-sur-Serein (89310) comes alive to the rhythm of the Burgundy truffle. The Truffle Market, organized by the Confraternity of the Burgundy Truffle of Noyers, is one of the most important truffle events in the region, bringing together producers, restaurateurs, gourmets, and the curious around the black jewel of the Burgundian undergrowth.
The Burgundy truffle (Tuber uncinatum), also known as the Saint-Jean truffle or Christmas truffle, is a distinct species from the Périgord truffle. Its hazelnut-brown flesh, its aromas of wild mushrooms, hazelnuts, and undergrowth make it a highly prized product for enthusiasts. It is harvested from October to December in the oak and hazel groves of the Yonne and neighboring departments, on limestone soils conducive to its development.
Burgundy, and the Yonne in particular, are among the most productive and recognized truffle lands for this species. The Confraternity of the Burgundy Truffle of Noyers has been dedicated for years to the promotion and enhancement of this local product of excellence.

The Confraternity of the Burgundy Truffle is once again organizing this flagship event for gourmets from the Yonne and Burgundy in the incomparable medieval setting of Noyers' ramparts.
From 8 am at the town hall, certified inspectors will check the truffles one by one, guaranteeing the quality and authenticity of the Tuber uncinatum offered for sale. At 10:30 am, the auction sale, launched to the sound of the horn, will bring together producers and buyers. The traditional giant truffle omelette will be offered to visitors present, while stalls of local producers, winemakers, and artisans will complete this day of flavors and conviviality in one of the Most Beautiful Villages in France.
Truffle inspection from 8 am at the town hall. Auction sale from 10:30 am until stocks are depleted.
