La Flambée de Morteau is an emblematic festival of the Haut-Doubs region that celebrates Morteau sausage and the ancestral know-how of smoking in tuyé, these large pyramidal chimneys of Franche-Comté farms. Organized every year on the third weekend of August, this popular festival offers three days of meetings, music, and gastronomy centered around the flagship product of the Franche-Comté terroir. The Flambée de Morteau, also known as the Festival de la Flambée et du Tuyé, is one of the most emblematic festivals of the Haut-Doubs. It celebrates Morteau sausage, this exceptional product smoked with softwood in the tuyés, these large wooden pyramidal chimneys that stand in the center of traditional Franche-Comté farms.
In the farms of the Haut-Doubs, the tuyé was once the central part of the house, where laundry was dried, bread was baked, and meals were prepared around a large wood fire. It was in this smoky atmosphere that cured meats were hung and slowly smoked with fir and spruce wood, acquiring their characteristic subtle aromas. This centuries-old tradition gave birth to Morteau sausage, distinguished by a Protected Geographical Indication (PGI) since 2010.
Every third weekend of August, Morteau transforms into the capital of Franche-Comté gastronomy. La Flambée offers an artisanal market bringing together local producers and artisans from Franche-Comté, tastings of Morteau sausage grilled, smoked, and cooked in various ways, as well as other regional specialties: cancoillotte, comté, Jura wines.
Concerts and entertainment punctuate the three evenings, creating a warm and festive atmosphere. Smoking demonstrations in a traditional tuyé allow visitors to discover this unique know-how, while guided tours invite them to explore the architectural and gastronomic heritage of the region.
La Flambée de Morteau brings together inhabitants of the Haut-Doubs and visitors in a spirit of conviviality and sharing. It contributes to the promotion of the gastronomic heritage of Franche-Comté and the renown of Morteau, the small capital of Haut-Doubs, beyond regional borders.
