The great gastronomic festival of hams and charcuterie from the Monts de Lacaune
Every summer, the town of Lacaune, nestled in the Monts de Lacaune at over 800 meters altitude, proudly celebrates its exceptional charcuterie. The Fête de la Charcuterie de Lacaune is a festive and popular tribute to the dry-cured ham and cured meats that have made this mountainous region of Tarn famous far beyond its borders. Free and open to all, this festival brings together thousands of visitors each year to honor ancestral charcuterie know-how.
Lacaune ham is the jewel in the crown of Haut-Languedoc gastronomy. Made according to ancestral methods passed down through generations, it benefits from a Label Rouge and a Protected Geographical Indication (PGI) which guarantee its quality and origin. The salting, drying in the crisp, pure air of the mountains, and respect for tradition make it a product of incomparable finesse and flavor. The Charcuterie Festival is the perfect opportunity to taste it directly from producers, spit-roasted, or at the many gastronomic stands.
One of the highlights of the Charcuterie Festival is the Masèl, an Occitan term meaning the season for slaughtering and preparing charcuterie. This convivial traditional meal brings participants together around charcuterie specialties prepared according to the ancestral recipes of Lacaune families: dry sausages, pâtés, black puddings, rillettes, and of course, the famous hams. It is a moment of gastronomic sharing that perpetuates a centuries-old tradition in the Monts de Lacaune.
The giant rotisserie is the emblematic image of the festival: whole hams slowly roasting on a spit before the amazed eyes of visitors, filling the streets of Lacaune with irresistible aromas. Tasting is guaranteed, accompanied by fresh bread and local wines.
The parade of charcuterie brotherhoods is another key moment of the day. Members of the brotherhoods, dressed in their traditional costumes, parade solemnly through the streets of Lacaune, testifying to the heritage and ceremonial dimension attached to the local charcuterie art. This festive ritual reinforces the sense of belonging and pride of a region that has built its gastronomic identity around its local products.
Around the charcuterie stands, a large local producers' market showcases the riches of the Monts de Lacaune and Haut-Languedoc Tarnais terroir: cheeses, honeys, jams, aromatic herbs, wines, and local crafts. This large free gastronomic festival celebrates Lacaune Label Rouge IGP ham and cured meats from the Monts du Haut-Languedoc: cutting demonstrations, a producers' market, a parade of brotherhoods, and entertainment all day long.
On Sunday, July 19, 2026, the town center of Lacaune hosts its traditional Cured Meats Festival, one of the major free gastronomic events in Tarn. All day long, from 9 AM to 6 PM, visitors will discover the manufacturing secrets of the cured meats from the Monts de Lacaune and interact with professionals of Lacaune Label Rouge IGP ham.
The day combines cured meat traditions, a market of local producers, demonstrations, and family entertainment in a mountainous setting, at an altitude of 800 meters in the heart of the Monts de Lacaune.
