About Fête de la Charcuterie

The Fête de la Charcuterie de Lacaune is one of the most popular gastronomic events in the Tarn. Every July, the town of Monts de Lacaune celebrates its Label Rouge IGP dry-cured hams and charcuterie with a festive program: spit-roasted hams, charcuterie brotherhood parades, Masèl (traditional meal), local producers' market, and family entertainment. Free entry in a friendly and popular atmosphere.

The Charcuterie Festival: The Gastronomic Pride of the Monts de Lacaune

Every summer, the town of Lacaune, nestled in the Monts de Lacaune at over 800 meters altitude, proudly celebrates its exceptional charcuterie. The Fête de la Charcuterie de Lacaune is a festive and popular tribute to the dry-cured ham and cured meats that have made this mountainous region of Tarn famous far beyond its borders. Free and open to all, this festival brings together thousands of visitors each year to honor ancestral charcuterie know-how.

Lacaune Ham: A Treasure of the Mountains

Lacaune ham is the jewel in the crown of Haut-Languedoc gastronomy. Made according to ancestral methods passed down through generations, it benefits from a Label Rouge and a Protected Geographical Indication (PGI) which guarantee its quality and origin. The salting, drying in the crisp, pure air of the mountains, and respect for tradition make it a product of incomparable finesse and flavor. The Charcuterie Festival is the perfect opportunity to taste it directly from producers, spit-roasted, or at the many gastronomic stands.

The Masèl: A Traditional Meal at the Heart of the Festival

One of the highlights of the Charcuterie Festival is the Masèl, an Occitan term meaning the season for slaughtering and preparing charcuterie. This convivial traditional meal brings participants together around charcuterie specialties prepared according to the ancestral recipes of Lacaune families: dry sausages, pâtés, black puddings, rillettes, and of course, the famous hams. It is a moment of gastronomic sharing that perpetuates a centuries-old tradition in the Monts de Lacaune.

Spit-Roasted Hams and Brotherhood Parades

The giant rotisserie is the emblematic image of the festival: whole hams slowly roasting on a spit before the amazed eyes of visitors, filling the streets of Lacaune with irresistible aromas. Tasting is guaranteed, accompanied by fresh bread and local wines.

The parade of charcuterie brotherhoods is another key moment of the day. Members of the brotherhoods, dressed in their traditional costumes, parade solemnly through the streets of Lacaune, testifying to the heritage and ceremonial dimension attached to the local charcuterie art. This festive ritual reinforces the sense of belonging and pride of a region that has built its gastronomic identity around its local products.

Producers' Market and Family Entertainment

Around the charcuterie stands, a large local producers' market showcases the riches of the Monts de Lacaune and Haut-Languedoc Tarnais terroir: cheeses, honeys, jams, aromatic herbs, wines, and local crafts. Entertainment for children and families completes the program, making this festival a multi-generational and convivial event where everyone finds their place.

Lacaune, Capital of the Monts and Spa Town

Lacaune is the capital of the Monts de Lacaune, a mountain range marking the transition between the Massif Central and Mediterranean Languedoc. Renowned for its thermal waters and green landscapes, the town is also a major center for Tarn gastronomy. The charcuterie festival finds a particular echo here: the know-how of Lacaune charcutiers is intimately linked to the territory, its altitude, its winds, and its unique microbiome, which promote optimal natural drying of hams and cured meats.
