The Samatan Fat Market is an emblematic gourmet event in Samatan, in the Gers department, in Occitanie. Samatan is world-renowned as a foie gras capital: its fat market, ranked among the most beautiful markets in France, attracts producers and enthusiasts every week who come to seek out fresh foie gras and duck and goose carcasses.
Throughout the season (from October to end of March), the fat market is held every Monday morning under the market hall, based on the principle of direct sales from producer to consumer. In summer, the commune extends this tradition with gourmet events showcasing Gascon local produce.
The Gers is the leading French department for traditional foie gras production. In Samatan, the quality of the products, the freshness, and the expertise of the breeders make the markets famous, well beyond the borders of Occitanie.

The 43rd edition of Foire au Gras de Samatan will be held from August 2 to 5, 2026 in Samatan, in the Haute-Garonne department.

Samatan is located approximately 36 km southwest of Toulouse. Parking is available around the city center; come early on market days, as it gets very crowded.
From November to March: carcass market at 9:30 AM, fat market (fresh foie gras) at 10:30 AM. From April to October: 10:00 AM for carcasses and foie gras.
