Place au Canard is the gastronomic festival of Saint-Sever, a historic town in the Landes. This end-of-year event celebrates duck foie gras: a foie gras market in the Jacobins cloister, a cooking competition, duck and foie gras preparation demonstrations, a 100% duck meal signed by a Michelin-starred chef, jazz tapas in the evening, and street performances. On the program: foie gras market at the Jacobins cloister on Saturday morning, a cooking competition sponsored by a renowned chef, culinary demonstrations in the afternoon (cutting, confit and foie gras preparation), jazz tapas evening on Saturday night, and on Sunday, Gascon mass, parade of brotherhoods, and street performances in the historic center.

Access to Saint-Sever

By car

Saint-Sever is accessible via the D933 from Mont-de-Marsan (25 min north) or Dax (35 min southwest). Parking spaces are available in the town center, near the Jacobins cloister. A parking lot is also available near the Saint-Sever bullring.

By train

The nearest station is Mont-de-Marsan, served by TER Nouvelle-Aquitaine lines. From Mont-de-Marsan, bus lines connect to Saint-Sever.

Saturday

Morning: Foie Gras Market at the Jacobins cloister, with direct sales of fresh foie gras, whole fattened ducks, and duck products by local producers. Late morning: Technical cooking competition on duck foie gras, judged by the patron chef and a panel of professionals. Afternoon (2:00 PM - 5:00 PM): Culinary demonstrations open to the public (duck cutting, confit preparation, foie gras preparation in terrine and pan-seared, preservation techniques). Evening: Jazz tapas evening at the Jacobins cloister with live music and duck-based tapas.

Sunday

Morning: Gascon mass at the abbey church. Then, a parade of gastronomic brotherhoods, performances by **Landes stilt walkers**, **theatrical performances**, and street entertainment in the historic center of Saint-Sever.

Access to the foie gras market, culinary demonstrations, and street performances is free. The gastronomic meal and the jazz tapas evening are paid and require reservation through the tourist office.

This end-of-year festival pays tribute to the Landes mulard duck, raised outdoors for 90 days and force-fed whole grain corn for 12 days, producing flavorful meat and foie gras with an incomparable texture.

The return of the foie gras market at the Jacobins cloister

One of the highlights of Place au Canard is the resurrection of the Marché au Gras (Foie Gras Market) at the Jacobins cloister, a historic market that had disappeared for over 45 years. On Saturday mornings, local producers take over this exceptional heritage site to offer fresh foie gras, whole fattened ducks, confit, magret, gizzards, and all the Landes duck specialties for direct sale.

A prestigious patron: Alain Dutournier

The event is sponsored by Alain Dutournier, a Michelin-starred Landes chef and an iconic figure of Southwest gastronomy in Paris. This chef, originally from the Landes region and a true ambassador of Gascon cuisine, presides over the festivities and prepares a 100% duck gastronomic meal served in the town's restaurants, enhancing every part of the duck in exceptional culinary creations.

Cooking competitions and demonstrations

Place au Canard features a technical cooking competition centered around duck foie gras, judged by the patron chef and a panel of professionals.
