For over fifteen years, the Villeneuve-Minervois Truffle Market has become one of the essential gastronomic events in the Aude region. Organized by the confraternity Los Trufaïres de Vilanovas de Menerbes, this market is held every Saturday morning from December to February, in the heart of the village, on avenue de la Clamoux. The Minervois region, with its limestone soils and Mediterranean climate, offers ideal conditions for cultivating black truffles (Tuber Melanosporum), this underground mushroom with enchanting aromas.

An authentic and ritualized market

The Villeneuve-Minervois truffle market follows a precise ritual inherited from truffle-growing tradition. In the morning, truffle growers deposit their harvests in the Jardin de la Truffière, under the school courtyard, for sorting and grading. At 11 AM sharp, a gunshot signals the official opening of the market. Then begins a rapid ballet of selection, weighing, and sales, where professional buyers and individuals rush to acquire the best specimens. In case of bad weather, operations move to the Vitalis-Cros complex.

The Maison de la Truffe d'Occitanie

On market days, visitors can also discover the Maison de la Truffe d'Occitanie, open continuously from 9 AM to 3 PM for just 1 euro. This museum space traces the history of truffle cultivation in Occitanie, presents the different species of truffles, and explains the cultivation and harvesting techniques. It's an ideal complement to a market visit to understand the fascinating world of this exceptional product.

The Truffle Night: an exceptional gastronomic dinner

The season concludes in style with the Truffle Night, organized on the evening of the last market day in February. For this gastronomic evening, a guest chef designs a menu entirely featuring truffles, served by students from the hospitality school. This prestigious evening attracts gourmets from all over the region and is the highlight of the truffle season in Villeneuve-Minervois.
