The Foire au Gras 2026 will be held on Sunday, December 6th, at the Gymnase Pierre de Coubertin in Castelnaudary. Producers from Lauragais will offer foie gras, confits, magrets, and capons for the end-of-year holidays. The gourmet and artisanal market and culinary activities will complete this day dedicated to the gastronomy of the Aude terroir.

The gourmet gathering of December in the Aude
Every first Sunday of December, Castelnaudary hosts the largest foie gras fair in the Aude department. For about thirty years, producers from Lauragais have gathered in this gastronomic capital to offer visitors the best of the local terroir. The fair is held at the Gymnase Pierre de Coubertin, a large covered space that allows producers' stalls to be set up in optimal conditions, even in winter weather. It is the unmissable event for preparing for the end-of-year holidays.
Foie gras, confits, and local products
The stars of the fair are, of course, the fatty products: duck and goose foie gras, confit, magrets, gizzards, rillettes, capons, and other products derived from ducks and geese. The producers, mostly located in Lauragais and the foothills of the Montagne Noire, come to present their artisanal production and offer tastings. Beyond fatty products, a gourmet and artisanal market offers cheeses, honeys, jams, wines, pastries, and artisanal creations, transforming the day into a true festival of flavors.
Activities and convivial meal
The Foire au Gras is not just about shopping. Culinary activities are organized throughout the day: cooking demonstrations, tasting workshops, and preparation tips for foie gras by local chefs. In the afternoon, visitors can share a convivial meal at the Halle aux Grains, a historic building in the center of Castelnaudary, featuring dishes that highlight local products. Concerts and street entertainment punctuate the day, creating a warm and festive atmosphere.

The Foire au Gras is organized in partnership with the Chamber of Agriculture of the Aude, the City of Castelnaudary, and local producer associations. It plays an essential role in promoting short supply chains and local agriculture, allowing producers to sell directly to the final consumer.
