About Marché au Gras

The Marché au Gras de Samatan is the most important foie gras market in France. Every Monday morning, from November to March, producers and buyers meet at the Halle de Samatan for the direct sale of duck and goose foie gras, carcasses, and local Gers products. This centuries-old market is an essential gastronomic institution in the Gers and Gascony regions.

Marché au Gras de Samatan: The Foie Gras Institution

The Marché au Gras de Samatan is a gastronomic institution that is several centuries old. Samatan is recognized as the foie gras capital, and its market is the most important in France.

Direct Sales

The market operates on the principle of direct sales from producer to consumer. The carcass market (whole ducks and geese) takes place at 9:30 AM, followed by the foie gras market at 10:30 AM. A cutting service is available on-site.

Season and Off-Season

From November to March, the market is in full swing with hundreds of producers. From April to October, a smaller foie gras market is held on Mondays at 10 AM.

Marché au Gras — edition 2026

A Market Monday's Schedule

  • From 8:30 AM — Open-air market (local products, fruits and vegetables, Gersois specialties) in the square.
  • 9:30 AM — Carcass market opens: at the whistle, the hall opens its doors and the crowd gathers around the tables where duck and goose carcasses are displayed.
  • 10:30 AM — Foie gras market: fresh duck and goose foie gras are put on sale. Products sell out very quickly, it's best to arrive early.
