About Flavors Festival
The Festival des Saveurs Pyrénées Audoises is held in Quillan every September, organized by the Communauté de Communes Pyrénées Audoises. Over two days, a producers' village, chef-led workshops, and various activities showcase the bounty of the Haute Vallée de l'Aude and the surrounding Pyrenean foothills. Each edition features a guest chef as patron: Franck Putelat in 2023 and Fabien De Bruyn in 2024. The festival has been on hiatus since 2025, with the Pyrénées Audoises tourist office announcing the next edition for September 2027.
Flavors Festival — edition 2026
There will be no Festival des Saveurs Pyrénées Audoises in Quillan in 2026. The Pyrénées Audoises Tourist Office has announced that the next edition is scheduled for September 2027. The previous edition, which was set for September 13th and 14th, 2025, was cancelled by the Communauté de Communes Pyrénées Audoises on August 1st, 2025.
No edition in 2026
No edition of the Festival des Saveurs Pyrénées Audoises is scheduled to take place in Quillan in September 2026. On its dedicated festival page, the Pyrénées Audoises Tourist Office states: "Next edition in September 2027." The Quillan town hall calendar for September 2026 makes no mention of the festival, and the organizer's website has not published any updates since August 1st, 2025.
The 2025 edition cancelled
On August 1st, 2025, the Communauté de Communes Pyrénées Audoises posted the following on the festival's website and Facebook page: "The Festival des Saveurs Pyrénées Audoises, which was scheduled for September 13th and 14th, 2025, in Quillan, has unfortunately been cancelled." The statement provided no reason for the cancellation and directed visitors to local partner producers, "while awaiting a future edition."
Last edition held: September 21st and 22nd, 2024
The festival was last held on September 21st and 22nd, 2024, with chef Fabien De Bruyn from the restaurant Le Bastion in Lagrasse serving as patron. The program featured a producers' village, cooking workshops, meat-cutting demonstrations, wine-tasting sessions led by Georges Gracia, and a concert by Mrs & Mr Marvel on Saturday evening.

Location
The festival is held in the town center of Quillan (11500), in the Haute Vallée de l'Aude, about 50 kilometers south of Carcassonne.
Access
By car: From Carcassonne, take the D118 via Limoux to Quillan.
By train: Quillan is no longer served by rail. Train services between Limoux and Quillan have been suspended since 2018 due to track conditions, and the Occitanie region suspended the reopening project in December 2024 (written question no. 9172, National Assembly).

In 2024, Saturday from 9:00 AM to 11:00 PM and Sunday from 9:00 AM to 6:00 PM.

A producers' festival in Quillan
The Festival des Saveurs Pyrénées Audoises is organized by the Communauté de Communes Pyrénées Audoises to promote the local products of the Haute Vallée de l'Aude and the wider Pyrenean foothills. It takes place in Quillan over two days in September. The 4th edition was held on September 21st and 22nd, 2019.
The producers' village
Around twenty producers host the village, joined by tableware artisans. In 2024, offerings included sheep's milk ice cream, charcuterie, grilled lamb and pork, goat cheese, spirulina, wines, Blanquette, Crémant, liqueurs, herbal wines, jams, sun-dried tomatoes, pesto, pickles, biscuits, honey, olive oil, aromatic plants, salmon, and wooden crafts. A partner village also brings together local unions, industry associations, and community groups.
Chef workshops
Each edition is sponsored by a guest chef who hosts public demonstrations using local ingredients and distributes recipe cards. Lionel Giraud sponsored the 2022 edition, Franck Putelat the 2023 edition, and Fabien De Bruyn (Le Bastion, in Lagrasse) the 2024 edition.
The rest of the program includes stands dedicated to gastronomy, tableware, meat cutting, nutrition, and hunting, as well as wine-tasting sessions, on-site dining, musical evenings, bread-making workshops, and a fruit basket competition for children.
A festival on hiatus since 2025
The 2020 and 2021 editions were cancelled. The 2025 edition, originally scheduled for September 13th and 14th in Quillan, was also cancelled on August 1st, 2025. No edition is planned for 2026; the Pyrénées Audoises tourist office has announced the next one for September 2027.
